Hash Brown Waffles with Steak and Eggs

ingredients
    • For the Waffles:
  • 5 large Potatoes (peeled and shredded)
  • 1 cup Onion (grated)
  • 2 large Eggs
  • 1/2 cup Sour Cream
  • 3 tablespoons Butter (melted; divided)
  • Salt and Pepper
    • For the Steak and Eggs:
  • 6 large Eggs
  • 3 tablespoons Butter
  • 1 16-ounce Strip Steak
  • Chives (chopped)
    • For the Cheddar Sauce:
    • 3 tablespoons Butter
    • 3 tablespoons All-Purpose Flour
    • 1 1/2 cups Milk
    • 1/2 teaspoon Cayenne Pepper
    • 1 cup Yellow Cheddar Cheese (grated)
    • Salt and Pepper
