Stovetop Lasagna

Ingredients

  • Kosher salt
  • 7 lasagna noodles (about 4 ounces)
  • 1 tablespoon extra-virgin olive oil, plus more for drizzling
  • 1 pound ground meatloaf mix, such as beef, pork and veal
  • 2 cups tomato sauce
  • 1/8 teaspoon red pepper flakes
  • 3 cups baby spinach
  • 1/3 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 6 tablespoons grated parmesan cheese
  • 1/4 cup thinly sliced fresh basil
