French Toast Baked Polenta Sticks

  • 1 cup polenta (may also be called medium or coarse ground cornmeal or grits)
  • 1 15-ounce can coconut milk
  • 1 1/4 cups water
  • 1 tablespoon ground cinnamon
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • sea salt
