BBQ Roasted Pork Tenderloin Stuffed with Braised Collard Greens & Caramelized Onions

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 1/4 cup red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1/8 teaspoon sea salt to taste
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium chicken stock
  • 1/2 cup stout beer or 1 cup low-sodium chicken broth
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 pound collard greens, washed and cut
  • 1 tablespoon no-fat cream cheese
  • 1 teaspoon hot sauce
  • 1 pound pork tenderloin
  • 1 1/2 cups any jarred BBQ sauce
  • Tooth picks
