Collard Greens Bubble and Squeak

Ingredients
  • Collards:
  • 1 gallon chicken stock
  • 3 cups apple juice
  • 1 cup small diced yellow onion
  • 1 tablespoon Cajun seasoning
  • 6 slices hickory smoked bacon, diced
  • 4 heads collard greens, rinsed
  • Potatoes:
  • 3 pounds peeled potatoes, medium dice
  • 1/2 cup all-purpose flour
  • 4 ounces unsalted butter
  • 1 tablespoon salt
  • 1 teaspoon white pepper
