Dorito Crusted Tilapia

  • 6 fish fillets
  • 2 handfulls of original doritos or chips of choice
  • 1/2 cup of almonds
  • salt, pepper, or garlic salt to taste

Directions: Throw doritos and almonds into spice grinder till breadcrumb like consistency.  Coat the fillets in the mixture.  Coat a baking pan with cooking spray.  Bake in over for 20-25 minutes at 400.

Ingredients
  • 1 (14.5-ounce) can chicken broth
  • 1 cup quinoa
  • 1 (14-ounce) can diced tomatoes, drained
  • 1 (10-ounce) can chicken breast, drained and flaked
  • 1 (8-ounce) can cut green beans, drained
  • 1 (8.75-ounce) can corn, drained
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh chopped parsley
  • 1/4 teaspoon ground black pepper

 

BBQ Pork or Beef

This recipe can work for beef roast as well.
 
  • Pork roast 1-2lb
  • 1/2 cup of teriyaki sauce
  • 2 cup of water
  • 1 1/2 tbsp cumin
  • 2tbsp garlic powder
  • 1/4 tsp tabasco chipotle sauce

Ingredients
  • 2 tablespoons extra-virgin olive oil
  • 4 ounces chopped pancetta (about 1/2 cup)
  • 1 medium yellow onion, finely chopped?
  • 3 cloves garlic, minced?
  • 2 teaspoons fresh thyme leaves?
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 2 (15-ounce) cans cannellini beans, drained and rinsed
  • 1 (14.5-ounce) can diced fire-roasted tomatoes?
  • 3 (14.5-ounce) cans chicken broth
  • 1 1/2 cups ditalini pasta (short tubular pasta)
  • 1/4 cup grated Parmesan cheese, for garnish

 

Cedar Plank Humpty Dumpty's

  • 2 cedar planks, about 12x6-inches each
  • 4 slices bread, such as brioche or challah (3/4-inch thick slices)
  • 7 eggs, divided
  • 2 tablespoons milk
  • 2 tablespoons plus 1/2 teaspoon McCormick® Grill Mates® Applewood Rub , divided
  • 1/2 cup grated smoked Cheddar cheese
